It is a national certification system of the quality of wines that was designed in the fifties by Sir Rolando Ricci, a lawyer from Rome who worked as public servant for the Ministry of Agriculture.
The D.O.C. denomination certifies wines whose grapes must be harvested in well-defined zones in accordance to particular regulations approved with ministerial decree that are intended to preserve the unique characteristics of a wine.
This mark exists in order to guarantee the real origin and quality of a wine.
The respect of regulations results from the control of wine’s production.
It is impossible to market wines with the “D.O.C.” mark if controls do not have occurred and particular requirements have not been found.
This DOC wine covers the entire regional territory.
It is a sweet tasting wine made from Aleatico grape (minimum 85%), with the possible addition of Negroamaro, Malvasia Nera and Primitivo.
It is necessary an aging for three years in order to obtain the recognition as Reserve.
The production area of this DOC wine covers the following municipalities: Lizzano, Sannicola and part of Gallipoli
“Alezio red wine” contains also the following wines: Negroamaro, Malvasia Nera from Lecce, Sangiovese and Montepulciano (20%).
The two types “red Riserva” and “rosé” are also produced.
The production area of this wine covers the municipalities of: Barletta, Andria, Trani, San Ferdinado di Puglia and Trinitapoli. It contains Nero di Troia with possible addition of Montepulciano, Sangiovese (maximum 30%) and Malbech (maximum 10%).
Red garnet in colour with orange hues if aged, this is a full-bodied wine, winy and armonic to the palate.
The minimum alcohol content for this wine is 12° and if aged for two years (one year in oak barrels), it receives the qualification of Reserve.
The production area of this DOC wine is Brindisi.
Red and rosé wines use the grape variety Negroamaro with possible addition of “Malvasia nera di Brindisi” or Sussumaniello, Montepulciano and Sangiovese (maximum 30%).
The production area of this wine covers the municipalities of Lucera, Troia and Biccari.
The grape varieties used in the production of this DOC wines are: Sumarello (35-60%), Montepulciano, Sangiovese, Malvasia Nera from Brindisi alone or together with the above-mentioned wines (25-35%), Trebbiano toscano, Bombino Bianco and Malvasia del Chianti alone or together with the above-mentioned wines.
Ruby red in colour, good olfactory characteristics, a wrapping and harmonic taste. It accompanies red meat dishes and mature cheese.
This DOC wine is one of the most notorious in Apulia and it is produced in the area that covers the municipalities of: Minervino Murge, Andria, Corato, Trani, Ruvo, Terlizzi, Bitonto, Palo del Colle and Toritto.
Castel del Monte DOC white wine includes the following grape varieties: Pampanuto or Pampanino, Chardonnay or Bombino bianco. Straw-yellow in colour, this wine offers pleasant and subtle olfactory sensations.
It is dry and cool to the palate.
“Castel del Monte DOC red wine” includes the following grape varieties: Nero di Troia, Aglianico, Montepulciano and Bombino nero. The last one only for Rosé wine.
The two typologies Novello and Riserva are also produced.
The production area of this wine covers the municipalities of: Cerignola, Stornara. Stornarella and Ascoli Satriano.
The grape varieties used in the production of this DOC wine are: Nero di troia (minimum 55%), blended with Negramaro (15-30%), Sangiovese, Barbera, Montepulciano, Malbech and Trebbiano toscano (maximum 15%).
Full-bodied red in colour, this is a perfect wine to be served with meat dishes and mature cheese like Caciocavallo.
This is a Doc that affects the upper part of the Arco Jonico of Taranto up to the border with the provinces of Bari and Brindisi.

The production of this DOC wine covers the municipalities of: Copertino, Carmiano, Arnesano, Monteroni and part of Galatina and Lequile.
The red wine version use Negroamaro grape with possible addition of Malvasia nera from Brindisi and from Lecce, Montepulciano and Sangiovese alone or together with the above-mentoned wines (maximum 30%).
The typologies “Riserva”, “Red” and “Rosé” are also produced.
The production area of this DOC wine covers the municipalities of: Galatina, Cutrofiano, Aradeo, Neviano, Seclì, Sogliano Cavour.
The DOC white wine version includes the following grape varieties: Chardonnay (minimum 30%) with possible addition of some authorized grape varities of the same area with white, not aromatic berries.
Red, rosé and Novello DOC wines contain Negroamaro (minimum 65%) with possible addition of some authorized grape varieties of the same area with red berries.
Chardonnay and Negroamaro (also Riserva) use their homonymous grape variety with a minimum percentage of 85%.
The production area of this DOC wine covers 16 municipalities between the provinces of Bari and Bat. “Gioia del Colle red wine” is made from different grape varieties: Primitivo (50-60%), Montepulciano, Sangiovese, Malvasia nera (maximum 10%), Negroamaro (40-50%).
Ruby red in colour with garnet-red hues if aged, this is a whole meal wine. Dry, harmonic, slightly tannic-tasting, it accompanies meat and cheese dishes.
The following versions are also produced: rosé, white, Primitivo and a sweet and often fortified Aleatico.
This DOC wine is one of the most notorious white wines in Apulia. Its production area covers the following municipalities: Gravina, Poggiorsini and part of Altamura and Spinazzola.
This wine contains: Malvasia del Chianti (40-65%), Greco di Tufo and Bianco di Alessano (35-60%), with possible addition of Bobbino bianco, Trebbiano toscano and Verdeca (maximum 10%).
Straw-yellow in colour with greenish hues, this wine presents itself to the palate as dry or pleasant.
There is also the sparkling version that perfectly accompanies meat dishes and mushrooms.
This DOC wine covers the municipality of Leverano. Its production process is very careful because of possible alterations during the fermentation.
White grape varieties are: Malvasia Bianca (minimum 50%) and Bombino bianco (maximum 40%). Bianco passito wine is obtained with appropriate dehydration techniques.
The “Bianco vendemmia tardiva wine” is obtained when the grape harvest begins not earlier than October,1.
Red wine version contains: Negroamaro (minimum 50%), Malvasia Nera di Lecce and/or Montepulciano and/or Sangiovese (maximum 40%).
Riserva, Rosé and Malvasia Bianca are also produced.
This DOC wine represents the province of Taranto and, specifically, the municipalities of: Lizzano, Faggiano and part of Taranto.
“Lizzano Rosso DOC” wine contains: Negroamaro (60-80%), Bombino Nero, Montepulciano, Sangiovese, Pinot Nero (maximum 40%), with possible addition of Malvasia Nera from Brindisi and/or from Lecce (maximum10%).
No later than March 30 after the harvest this wine is available on the market. It can be considered young or Novello (when subjected to a grapes crushing).
It is a whole meal wine, also present in the sparkling version.
There are also the following typologies: rosé, sparkling rosé, white, sparkling white, Negroamaro rosé, Negroamaro red and Malvasia nera.
The production area of this white wine refers to the municipalities of: Locorotondo, Fasano and part of Cisternino.
It contains Verdeca (50-60%), Biano d’Alessano (35-50%), with possible addition of Malavasia Toscana, Bombino bianco and Fiano (5%).
Greenish in colour with straw-yellow hues, it is dry and pleasant to the palate and accompanies many types of appetizers.
This wine is also present in the sparkling version.
The production area of this wine covers the following municipalities: Martina Franca, Crispiano, Alberobello, Ceglie Messapico and Ostuni.
The “Martina Franca DOC wine” contains: Verdeca (50-65%), Bianco d’Alessano (35-50%), with possible addition of Malvasia Toscana, Bombino bianco and Fiano (maximum 5%).
Greenish in colour with straw-yellow hues, it is dry and pleasant to the palate and accompanies appetizers and light dishes.
The sparkling version is also present.
The production area of this wine covers the entire territory of Matino and parts of the following municipalities: Parabita, Alezio, Taviano, Casarano, Melissano, Tuglie and Gallipoli.
The Red wine version contains Negroamaro with possible addition of Malvasia Nera and Sangiovese (maximum 30%).
The two typologies “red” and “rosé” are also produced.
The production area of this DOC wine covers the municipalities of two provinces: BAT and Foggia.
It contains: Moscato di Trani (also known as Moscato Reale) with possible addition of other muscat-flavored grape varieties (maximum 15%).Golden yellow in colour, this is a natural sweet wine. The minimum alcohol content for this wine is 14,5° and it is necessary a wine-refining of almost five months. There is also the fortified version with a minimum alcohol content of 18°.
The production area of this wine includes the municipalities of Nardò and Porto Cesareo.
The Red wine version contains Negroamaro with possible addition of Malavasia nera from Brindisi and/or Lecce and Montepulciano (maximum 20%).
“Red Riserva” and “Rosé” are also produced.
This DOC affects the provinces of Taranto, Brindisi and Lecce and is reserved for wines that meet the conditions and requirements established by the relevant production regulations for the following types: Red, also Riserva and Rosato, also Spumante and Frizzante.
The production area of this wine covers the municipalities of: Orta Nova, Ordona, Ascoli Satriano, Crapelle, Foggia and Manfredonia.
The grape varieties used in the production of this wine are: Sangiovese, Uva di Troia, Montepulciano, Lambrusco Maestri and Trebbiano Toscano (maximum 40%).
The production area of this wine encloses the following municipalities: Ostuni, Carovigno, San Vito dei Normanni, San Michele Salentino and part of Latiano, Ceglie Messapico and Brindisi.
The different kinds of wine produced are : “Ostuni bianco doc” with addition of the following grape varieties: Impigno (50-85%), Francavidda (10-15%) with possible addition of Bianco d’Alessano and Verdeca (maximum10%) and “Ostuni Ottavianello doc” that contains Ottavianello with possible addition of Negroamaro, Malvasia nera, Notar Domenico and Sussumaniello (maximum 15%).
This wine contains only Primitivo grape that have been grown in the following territories: Manduria and Sava, the municipalities of Erchie, Oria and Torre Santa Susanna, some municipalities on the eastern side of the Ionic coast.
Purplish red in colour with orange hues if aged, this wine is pleasant and harmonic to the palate. Also present are the following typologies: natural sweet, sweet fortified, dry fortified.
This wine contains: Nero di Troia (minimum 60%) with possible addition of Sangiovese and Montepulciano (maximum 35%).
Ruby red in colour, this is a full-bodied and a whole meal wine.
The minimum alcohol content for this wine is 12°.
If aged for almost two years and with an alcohol content of 13°, it receives the qualification of Reserve.
The production area of this DOC wine covers the municipalities of: Salice Salentino, Veglie and Guagnano, San Pancrazio Salentino and Sandonaci, part of Campi Salentina and Cellino San Marco.
Red and rosé wines contain: Negroamaro, sometimes blended with Malvasia Nera di Brindisi and Malvasia Nera di Lecce (maximum 20%).
The red wine version, if aged for almost two years and with a minimum alcohol content of 13°, receives the recognition of Reserve.
Otherwise, it is produced Novello through the method of carbonic maceration.
“Sweet Aleatico” contains Aleatico (minimum 85%), with possible addition of Negroamaro, Malvasia Nera and Primitivo (massimo 15%).
If aged for two years it receives the qualification of Reserve.
The white wine version contains: Chardonnay (minimum 70%), with possible addition of other grapes of the same area (maximum 30%).
“Pinot bianco” contains Pinot bianco (minimum 85%) with possible addition of Chardonnay
Sauvignon (maximum 15%)
The production of this DOC wine, the most notorious in the territory of Daunia, covers the municipalities of: San Severo, Torremaggiore, San Paolo Civitate, Apricena, Lucera and Lesina.
This DOC wine has the following typologies: white, red, rosé and sparkling.
San Severo DOC wine uses the following grape varieties: Bombino bianco (40-60%), Trebbiano toscano (40-60%), with possible addition of Malvasia bianca or Chianti and Verdeca (maximum 20%). Both wine and sparkling spumante are served with fish appetizers.
Red and rosé San Severo DOC wines contain: Montepulciano d’Abruzzo (70-100%) and Sangiovese (maximum 30%).
Ruby red in colour towards orange hues if aged, this is an interesting whole meal wine. Its scent is winy and pleasant.
This DOC wine covers the municipalities of: Squinzano, San Pietro Vernotico, Torchiarolo, part of Cellino San Marco, Novoli and part of Campi Salentina, Trepuzzi, Surbo and Lecce.
Red and rosé Squinzano wines use the following grape varieties: Negroamaro, Malvasia Nera from Brindisi and/or Lecce and Sangiovese (maximum 30%).
This wine has been recognised as DOC in the mounth of october 2011 and it refers to the historical grape variety known with the name of Nero di Troia. Specifically this wine includes: “Rosé”; “Red” and “Nero di Troia”.
There is also the version of “Reserve wine” for “Red” and “Nero di Troia”.
The minimum percentage for the “Nero di Troia” is 65%; the addition of other grape varieties may be included but in the maximum percentage of 35%.
The production area of this wine covers the entire province of Foggia: Lucera, Troia, Torremaggiore, San Severo, S.Paolo Civitate, Apricena, Foggia, Orsara di Puglia, Bovino, Ascoli Satriano, Ortanova, Ordona, Stornara, Stornarella,Cerignola, and part of the province of BAT: Trinitapoli, S. Ferdinando di Puglia and Barletta.
“Tavoliere delle Puglie” wine is available from the harvest campaign 2011-2012.
